Cheese-Stuffed Pacaya: Crispy and Full of Flavor

Cheese-stuffed pacayas are one of those flavors that transport us straight home. Their crispy texture and the melted cheese in the center make this dish a special recipe to share with the family. It is a perfect choice for those who enjoy traditional Latino cuisine and wish to keep alive the recipes that have been passed down from generation to generation.

Ingredients

  • 4 pacayas

  • Quesillo or mozzarella cheese

  • 2 eggs

  • Salt and pepper to taste

  • Oil or shortening for frying

Preparation

  1. Prepare the pacayas: Boil the pacayas in salted water until tender. Cut them lengthwise and remove the center if it is too bitter.

  2. Stuffing: Place a portion of cheese inside each pacaya and press gently.

  3. Battering and frying: Beat the eggs until you achieve a smooth, consistent mixture. Dip each pacaya into the egg wash and fry in hot oil until golden brown on all sides.

  4. Serving: Place on paper towels to remove excess oil. Add to a homemade tomato sauce and bring to a simmer.
